    Default Freeze Ricotta Cheese?

    Has anyone tried freezing ricotta cheese and if so, did it thaw well to use? There is a great deal at my grocery store on this and would like to stock up if it is freezable.
    ISO
    Croutons (any brand)
    So Delicious Dairy Free products
    Yoplait, Dannon or Stonyfield yogurt QUART size only
    Sara Lee bread (not buns)
    Healthy Life bread products
    Any brand for tortillas & con queso
    Bulk roll pork sausage roll (Jimmy Dean, Bob Evans, Tennessee Pride)
    Simply Lemonade

    In my opinion, I like it better frozen! I do it all the time. sometimes my winn dixie has them markdown for $1, i buy em all up and wrap them tight in palstic wrap(if u wanna be extra safe u can put theminto a ziploc after the plastic) I've actually kept them longer than 6 months! I let it thaw a little on the counter to get it started and then the rest of the way in the fridge. I've never found alot of water after thawing but I sit it in a strainer anyway just in case!!! HTH

    What can I do with ricotta cheese? My mom bought a 2 lb tub of it just for one recipe, and I have a ton leftover. It was my first time using it, besides lasagna or stuffed shells what can I do with it? Are there any dessert recipes using it?

    I don't have one handy but I know you can use it in baked goods. I've seen it in muffins and cakes. I've never tried it myself but have been debating using it in place of sour cream in a coffee cake recipe.

    You can actually mixed it with ingredients to make it sweet or things to make it savory, put a little spoonful in a wonton wrapper and freeze them for when you want ravioli or an after dinner sweet treat! I like the ravioli idea!!! Fresh herbs and parmesan cheese!
