While cool whip works good in a pinch... if you want "to die for" whipped frosting use one packet of dream whip with one package lemon pudding and 1 1/2 cups of milk - beat until fluffy.
I've also done lemon cake with raspberry jello and lemon frosting. Yummy!

See I knew we'd have an expert out there....I used a toothpick to make holes and 2 boxes of jello...I think 2 was too much for a 9X13 pan. My holes were too close together. I did not get pretty lines. BUT, IT SURE WAS TASTY NEVERTHELESS! So, even if you mess up your poke cake, you can still eat it....
