My mom has done this for years, more often than not with lemon. she would take a cake mold (so it was kinda like a mountain of a cake) and bake the cake in that, then poke the holes in it and pour in the jello, then she would do something with the icing, not sure what but it was a little runnier and she kinda drizzled it over the cake and sprinkled it with sugar crystals. it was so yummy but I think the pudding/cool whip would be a great summery dessert.
