Chicken Pot Pie - this can feed 5-7 people, depending on how big their appetite is
1.5 pounds chicken breasts
1 8oz bag of frozen peas and carrots
2 potatoes, chopped
1 onion, chopped
2 boxes biscuit mix (I use Jiffy, you just need enough to cover the top)
couple of tablespoons of flour
salt and pepper to taste
Boil the chicken until done, reserving the broth. Take out the chicken, and while it's cooling, saute the onion and potato (in another pan of course) in oil approx. 5 minutes. Add a couple of tablespoons of flour (you want to use about the same amount as the oil in the pan. 2tbsp oil = 2tbsp flour). Stir the flour for about 30 seconds, just to cook the flour. Add the chicken broth a few ladles at a time, stirring after each addition, until it's the consistancy you like (I personally like mine kind of thick. You can always add more.). Add salt, pepper, and italian seasoning (optional) to taste. Simmer for about 10 minutes (you can shred the chicken while you wait). Add the frozen veggies and shredded chicken. Transfer mixture to a 13x9 casserole dish. Mix up the biscuit dough (I like to use any leftover broth instead of water just for extra flavor) and spread the dough over the chicken mixture. It's easier to spread if you keep your hands wet. Bake at 375 until the biscuits are done.
